Leah Chase's Buttermilk Biscuits


  • 2 cups all-purpose flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/3 cup shortening
  • 3/4 cup buttermilk


  1. Preheat oven to 450 °F.
  2. In a large bowl, combine flour, baking powder, salt, and baking soda.
  3. Cut in shortening until mixture resembles coarse crumbs.
  4. Stir in buttermilk just until moistened.
  5. Turn onto a lightly floured surface.
  6. Roll to 1/2-inch thickness; cut with a floured 2-1/2-inch biscuit cutter.
  7. Place 1 inch apart on an ungreased baking sheet.
  8. Bake for 8 to10 minutes or until golden brown. Serve warm.
